About this recipe

This recipe uses fresh bananas and blueberries and old fashioned oats to really maximize flavor and nutrition. Old fashioned oats are less processed so they keep you full longer, and they hold up better to the baking process.

Banana blueberry baked oatmeal is infused with the subtle warm flavors of cinnamon and vanilla and just a hint of maple syrup, layering this oatmeal with a great complexity of flavors. The best part: your oven does all the flavor-mixing work!

The versatility of this recipe can’t be beat. The oatmeal is sweetened naturally with maple syrup and finished off with a vanilla glaze drizzled over it. You can add as little or as much glaze as you like. Of course, the standard rule of glaze is the more the merrier! If you’d like a different twist on this recipe, try it with cinnamon cream cheese glaze.

It’s also super easy to make this one gluten free and/or vegan with GF oats, a flax egg, and non-dairy milk.

This recipe is sure to become a new favorite, and it will quickly transition into a staple recipe in your home. It looks good, tastes good, and is good for you. As far as baking goes, this one’s a home run for sure.
