These easy banana fritters are made from scratch by coating bananas in a simple pancake batter. The result is a thick, fluffy, flavorful batter surrounding a banana center. Like an apple fritter or fried donut, these banana fritters are a simple but special treat. What you need

If you have bananas, you probably have all the ingredients you need on hand!

  • Dry Ingredients: Flour, baking powder, salt, sugar, and powdered sugar are all you need!
  • Wet Ingredients: You’ll need oil for frying, milk, egg, vanilla extract, and melted butter.
  • Bananas: You want to use ripe bananas so they’re nice and sweet but save your super super brown bananas for banana bread pancakes. Bananas that are a little less ripe will stay put on the sticks better for this recipe.

How to make it

Heat canola oil in a sauce pan to 375ºF. Adjust the amount of canola oil based on the size of the saucepan. You will need at least 3 inches of oil to fry the fritters. Meanwhile, peel and cut bananas. Cut each banana into 3 sections and pierce the center of each banana with a popsicle stick.

In a medium bowl, add flour, baking powder, salt, and sugar and mix to combine. Next, add the milk, egg, vanilla, and butter. Whisk until the batter is smooth. Pour batter into a mason jar (or tall glass).

Dip the banana into the pancake batter and hold it above the jar to allow excess batter to drip off.

Gently place the banana into the hot oil and fry for 5-6 minutes, flipping if necessary. Remove from oil and place on a paper towel lined plate to remove excess oil.

Sprinkle each with powdered sugar and serve with maple syrup to dip. Enjoy!

  • This recipe uses pancake batter to create a deep-fried banana fritter, but it’s similar to a donut. Go ahead and top these fritters like you would your favorite donut, with powdered sugar, sugar and cinnamon, or frosting and sprinkles.
  • If you don’t have popsicle sticks on hand, you can cut your banana pieces smaller and use a slotted spoon to gently lower your coated bananas into the oil.
