French toast roll-ups are a fun, kid-friendly breakfast that rolls a sweet cream cheese filling into French toast, then dusts them with cinnamon sugar for the perfect finishing touch.
1loaf(20 oz.) white bread(or 18-20 slices of bread)
2eggs
3tablespoonsmilk
1teaspoonpure vanilla extract
2 to 4tablespoonsbutter
1cupgranulated sugar

Instructions
Beat the cream cheese in a large bowl until smooth, then stir in the powdered sugar and 1 teaspoon of the cinnamon.
Cut the crusts off the bread and roll each one out using a rolling pin to flatten them completely.
Spread 1 to 2 tablespoons of the filling mixture onto the bread and roll it up. Repeat the process with the remaining bread and filling.
Whisk the eggs, milk and vanilla together in a shallow bowl and dip 5 to 6 of the rollups into the egg mixture.
Heat 1 tablespoon of the butter in a large skillet over medium heat. Fry 5 to 6 of the rollups at a time in the pan for 3 to 4 minutes, turning them every 30 seconds so that they get browned all the way around and fully cooked.
Repeat the process with the remaining roll ups.
Whisk the granulated sugar and remaining tablespoon of cinnamon in a shallow bowl then roll the cooked French toast sticks around in the sugar.
Serve immediately with syrup and milk if desired.
Notes
Makes about 18 roll-ups.
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in a pan with some butter to get a nice crust or in the microwave for 30 seconds or until heated through.
