It’s the most magical time of the year, and your Christmas breakfast should be magical too! Christmas pancakes are fun and festive, and this easy pancake recipe is the perfect way to involve the whole family in Christmas morning fun.

Instructions
In a large bowl, mix flour, baking powder, sugar and salt. In a small bowl, beat milk, eggs, oil, vanilla extract and 2-3 drops food coloring.
Pour wet ingredients over the dry and mix well until a batter forms. Don’t overmix. If you’d like them a little greener, add more food coloring, drop by drop, stirring between additions.
Heat a nonstick skillet over heat. Pour batter using ¼ cup. Cook until edges start to dry and bubbles appear, about 3-4 minutes, then flip on the other side. Cook for another 1-2 minutes. Repeat until there is no batter left.
Stack pancakes and serve immediately with whipped cream, cookies, sprinkles, and agave nectar as toppings.
Notes
makes about 12 pancakes
Make it more fun by using different amounts of batter to create a Christmas tree. Stack with the large pancake and move to top with the smaller ones.
Green pancakes are best to make on low heat to preserve the green color. It takes a bit longer to cook but it will be nice and green.
Vanilla extract can be replaced with peppermint extract, but reduce the amount to 1/4 teaspoon.
