This cinnamon and vanilla infused vegan French toast recipe is a special plant-based breakfast or brunch idea that comes together in minutes. It has a golden, crispy exterior and a soft and fluffy interior. Try it with all of your favorite toppings!

Instructions
In a large mixing bowl, add all of the ingredients (yogurt, water, flour, sugar, vanilla, cinnamon) and mix well.
Slice the bread in thicker than normal slices, about an inch thick.
Place a lightly oiled skillet on a stove top burner and preheat on medium/low heat for 3-5 minutes.
Dip the bread in the batter and let sit for about 10-15 seconds on each side. The batter is thick so it may take a while to soak into the bread slices.
Place battered slices of bread in the skillet and cook for 3-5 minutes until golden brown and then flip over and cook for another 3-5 minutes until both sides are golden brown. You can cook more than one piece at a time depending on how large the bread slices are and how large the skillet is.
Serve right away or place in a warm oven until ready to eat.

To keep French toast warm, place in a 200ºF oven until ready to go! If you put it on a wire rack, it will keep the outside crisp.
Once completely cooled, store leftover French toast in an airtight container in the fridge for up to 4 days.
To reheat, pop your slices in the toaster or microwave. Once warmed through, top with your favorite toppings and enjoy.
