This egg sandwich board is the perfect addition to your next brunch! Let your guests assemble their own savory egg sandwiches with a variety of toppings.
Bake biscuits, according to the package directions. Set aside.
Begin cooking breakfast meats over medium-low high heat on the stove top. I cooked bacon in one skillet and the sausage and Canadian bacon in another.
While meat is cooking, bake hash brown patties at 425ºF for 20 minutes, flipping halfway through.
Once meat and hash browns are done, they can go in the oven at 200ºF to keep warm while you cook the eggs.
Fry 5 eggs, sunny side up. Crack your eggs and then cover with a lid to help cook the whites on top. Season with salt and pepper. In a small bowl, scramble 3 eggs with a dash of milk. Pour into your skillet to make an omelet. Sprinkle half with cheese. Fold the omelet and cook till firm. Cut it into 4 slices.
To assemble the board:
Line up the variety of breads across the top of the board and place the eggs in a diagonal line across the middle of the board. Place breakfast meats on the sides. For variety, try placing the bacon in a miniature mason jar and the sausage and Canadian bacon in a small skillet.
Fill in with hash brown patties, cheese slices, mayonnaise and strawberries.
Around the sides, place sliced tomatoes, avocado, extra cheese, and grapes.
Serve immediately.
Notes
Nutrition is very much an estimate, since each individual sandwich will vary. It will also change depending on what brands you use.
Have fun making this board your own! Try adding bacon jam, different fruits, different bread choices, or a variety of cheeses.
