These sweet little banana silver dollar pancakes are fluffy and fun; a favorite of kids and adults everywhere! Customize them to be as healthy or as indulgent as you’d like.
In a small bowl, mix the flour, brown sugar, baking powder, salt, and cinnamon.
In a separate medium bowl, whisk the eggs, melted butter, milk, vanilla extract, and bananas.
Fold the dry ingredients into the wet ingredients, until there is no dry flour visible. The batter should still be lumpy, don’t overmix.
Heat your electric griddle to 375°F (190°C) or turn your stovetop to medium heat. Melt butter on griddle or skillet.
Using a small scoop, drop batter onto skillet in 1 tablespoon portions.
Once the pancake begins to bubble, flip over to finish cooking. Serve hot.

Banana silver dollar pancakes can be made ahead of time and stored in the refrigerator for up to 5 days, or in the freezer for up to 3 months.
If you want to freeze these banana silver dollar pancakes, we recommend flash freezing them by placing them in a single layer on a parchment-lined baking sheet for an hour. Once they have frozen through, transfer them to a freezer-safe container or zip-top bag for storage.
To microwave, reheat in 15 second intervals until the pancakes are hot. You can also reheat banana silver dollar pancakes in a skillet; melt butter over medium-low heat, then add the pancakes and cook until warm. Another option is warming them in a 350ºF oven for about 10 minutes.
